Lavender Simple Syrup and Lattes

The mint in our garden is going wild, so I decided to make some mint simple syrup. As I was making it, I was looking out of our kitchen window and saw the lavender in full bloom and had the idea to make some lavender simple syrup as well! I am so glad I did. I put down below how I made the syrup. You can really use anything, I’ve done mint and lavender. I have some rosemary in the garden, that may be my next herb to try.

Lavender Simple Syrup

  1. Mix 1 cup water and 1 cup sugar and about a tablespoon of lavender blossoms.
  2. Heat on the stove until it’s boiling and stir. The sugar should be dissolved and the burner can be turned off.
  3. Let the mixture sit on the burner for 30 minutes.
  4. Pour into a container and store in the refrigerator for a week (if it lasts that long!).

When I make mint simple syrup, I load up on mint. For two reasons, we have so much mint and I like really strong flavored syrup.

I’ve been using the lavender simple syrup for Lavendar Lattes all week, I’m talking twice a day. It tastes so good, I crave a second one in the afternoon. Thankfully, I have decaf espresso so I’m still able to sleep at night. I just pour it in as I would any flavored syrup, no measuring, just eyeballing the amount I want.

If I make the rosemary simple syrup, I’ll let you know if I recommend it.
